Being on a budget, does not necessarily mean eating tasteless food. You can make delicious and quality meals for breakfast, lunch, dinner, and dessert with just a few ingredients, a mug and a microwave.

1. Baked Oatmeal

Need a quick breakfast? Want to try something new? Try making apple banana baked oatmeal. Put half a cup of quick cooking oats, one tablespoon of ground flax seed, one egg, and half a cup of milk in the mug, and stir. Then add a third of a mashed banana, a pinch of cinnamon, half of a chopped apple, and two teaspoons of honey. Cook in the microwave on high for two to three minutes.

2. Quiche

Yes, that’s right. You can make a quiche in a coffee mug. Beat one egg and one and a half tablespoons of milk together with a fork in a coffee cup. Take a quarter of a bagel, tear it into small pieces, and stir them in. Add cream cheese. Tear some ham into small pieces, and then add it to the mixture. Sprinkle with thyme. Microwave your mug on high for one minute or until it’s all done.

3. Chilaquiles

Beat one egg and one tablespoon of milk in the mug. Add one tablespoon of cheddar, three-quarters of a cup of broken tortilla chips, some salsa, and stir. Microwave everything on high for a minute, or until finished cooking. Garnish with extra chips, cheese, sour cream, and salsa as desired.
